Ingredients
- 2 cans (15 oz each) black beans, drained and rinsed
- 2 cups corn kernels (fresh or frozen, thawed)
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 1/2 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, red bell pepper, jalapeño pepper, and red onion.
- Add the chopped cilantro and mix gently to combine.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, and chili powder until well blended.
- Pour the dressing over the bean and vegetable mixture.
- Season the salsa with salt and pepper to taste.
- Toss all the ingredients well to ensure even coating.
- Cover the bowl and refrigerate the salsa for at least 2 hours to allow flavors to meld.

Notes
You can use canned, frozen (thawed), or fresh corn. Replace black beans with pinto beans if desired. For less heat, omit or reduce jalapeño. Prep salsa up to 2 days ahead; store refrigerated in an airtight container. If liquid pools after chilling, drain before serving. If salsa tastes bland, add extra lime juice or salt to enhance the flavor.
