Ingredients
Scale
- 2 cups (240g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon granulated sugar
- ½ teaspoon salt
- ½ cup (115g) unsalted butter, chilled and cubed
- ¾ cup (180ml) cold buttermilk (or milk with 1 teaspoon vinegar or lemon juice)
- 2 tablespoons heavy cream or melted butter (for brushing)
- Optional add-ins: shredded cheese, fresh herbs, or crumbled bacon
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Add the chilled butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.
- Gradually pour in the buttermilk, stirring gently until the dough just comes together. Do not overmix.
- Turn the dough onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Fold the dough into thirds and pat it out again. Repeat this 2–3 times for flaky layers.
- Use a round biscuit cutter or glass to cut out biscuits. Gently gather the scraps, press together, and cut out more biscuits.
- Place the biscuits on the prepared baking sheet. Brush the tops with heavy cream or melted butter.
- Bake for 12–15 minutes or until the biscuits are golden brown and puffed.
- Serve warm with honey, jam, or gravy, and enjoy!
Notes
- For flakier biscuits, make sure the butter and buttermilk are as cold as possible.
- Avoid twisting the biscuit cutter to help them rise evenly.
- Store leftovers in an airtight container at room temperature for up to 2 days or freeze unbaked biscuits for up to 3 months.
