  • ¾ cup (180ml) cold buttermilk (or milk with 1 teaspoon vinegar or lemon juice)
  • 2 tablespoons heavy cream or melted butter (for brushing)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the chilled butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.
  4. Gradually pour in the buttermilk, stirring gently until the dough just comes together. Do not overmix.
  5. Turn the dough onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Fold the dough into thirds and pat it out again. Repeat this 2–3 times for flaky layers.
  6. Use a round biscuit cutter or glass to cut out biscuits. Gently gather the scraps, press together, and cut out more biscuits.
  7. Place the biscuits on the prepared baking sheet. Brush the tops with heavy cream or melted butter.
  8. Bake for 12–15 minutes or until the biscuits are golden brown and puffed.
