1.5 pounds baby potatoes (or any type of small potatoes), halved

– 3 tablespoons olive oil

– 4 garlic cloves, minced

– 1/2 cup grated Parmesan cheese

– 1 teaspoon dried oregano

– 1 teaspoon garlic powder

– 1/2 teaspoon paprika (optional, for a hint of smokiness)

– Salt and freshly cracked black pepper, to taste

– Fresh parsley, chopped (for garnish)


Instructions

1. Preheat the oven to 400°F (200°C).

2. Prepare the potatoes: Wash and halve the baby potatoes. Place them in a large mixing bowl.

3. Season the potatoes: Drizzle the olive oil over the potatoes, then add the minced garlic, Parmesan cheese, oregano, garlic powder, paprika (if using), salt, and black pepper. Toss everything together until the potatoes are evenly coated

4. Roast: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy on the outside and tender inside. Flip the potatoes halfway through cooking for even crispiness.
