Description

Baked Zucchini and Cheese is a comforting, cheesy casserole that highlights tender zucchini slices baked under a golden, crispy layer of mozzarella, Parmesan, and breadcrumbs. Seasoned with garlic powder and Italian herbs, this family-friendly dish is flavorful, aromatic, and easy to prepare, making it a perfect side or light main for weeknight meals or gatherings. With a crisp top and gooey cheese beneath, it’s a delightful way to enjoy vegetables.

Ingredients

Scale
  • 4 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced zucchinis, olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the zucchini mixture evenly in a baking dish.
  4. Sprinkle mozzarella and Parmesan cheese over the top.
  5. Evenly distribute breadcrumbs on top of the cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

For a gluten-free version, substitute regular breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers. You may use cheddar or Monterey Jack cheese instead of mozzarella, or add a layer of tomato slices for extra flavor. Prepare ahead by assembling and refrigerating up to 6 hours before baking. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best texture. If zucchini seems watery, pat slices dry with a paper towel before baking. To avoid soggy results, do not overbake.
