Description

Ingredients

  • 3 ripe avocados, pitted and peeled
  • 1 cup heavy cream
  • ¾ cup whole milk
  • ¾ cup granulated sugar
  • ¼ cup fresh lime juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt


Instructions

  1. Blend avocados until completely smooth.
  2. Whisk together heavy cream, whole milk, and granulated sugar until sugar dissolves.
  3. Add avocado puree, lime juice, vanilla extract, and salt to the cream mixture.
  4. Whisk until the mixture is well combined and smooth.
  5. Chill the mixture in the refrigerator for 2 hours.
  6. Churn in an ice cream maker according to manufacturer’s instructions for 20 to 25 minutes.
  7. Transfer to an airtight container and freeze for 4 hours until firm.

Notes

For a dairy-free option, substitute coconut cream and almond milk for heavy cream and whole milk. Replace lime juice with lemon for a different citrus note. You can make ahead and store tightly covered in the freezer for up to one week; let soften for 5 minutes before scooping. If ice cream turns icy, ensure mixture is well-chilled before churning and use airtight containers to limit air exposure.
