Ingredients
- 1 medium sugar pumpkin, peeled and cut into fry shapes
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Cut the pumpkin into 1/2-inch thick fry-shaped strips.
- Toss the pumpkin strips with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Preheat the air fryer to 400°F (200°C).
- Arrange the seasoned pumpkin strips in a single layer in the air fryer basket.
- Cook for 12-15 minutes, shaking the basket halfway through for even cooking.

For a dairy-free version, omit or substitute Parmesan with nutritional yeast. You can use other winter squashes such as butternut if sugar pumpkin isn’t available.
