Description

Zucchini Garlic Bites are a flavorful, bite-sized appetizer made from tender zucchini, aromatic garlic, herbs, and parmesan, mixed with breadcrumbs and egg for a golden, crispy exterior. These delicious morsels are baked rather than fried, making them healthier yet still satisfying. Serve them warm with tangy tomato sauce for dipping as a crowd-pleasing starter or snack.

  • 1 cup shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives or 1 tablespoon dried chives
  • 1 tablespoon chopped fresh parsley or 1/2 tablespoon dried
  • 1 teaspoon chopped fresh basil or 1/2 teaspoon dried
  • 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
  • Pinch of salt and pepper
  • Tomato sauce for dipping

Instructions

  1. Preheat oven to 400˚F and coat a baking sheet with olive oil or non-stick spray.
  2. Grate zucchini into a clean towel, then wring out excess moisture.
  3. Finely grate garlic.
  4. Mix zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt, and pepper in a bowl until well combined.
  5. Form mixture into tablespoon-sized balls and arrange on baking sheet.
  6. Bake for 15-18 minutes until golden brown.
  7. Serve bites warm with tomato or marinara sauce for dipping.

Notes

For gluten-free bites, use gluten-free breadcrumbs. Parmesan can be swapped for Pecorino Romano or nutritional yeast for a vegan option (use egg replacement too). Bites can be prepared ahead and refrigerated up to one day before baking or frozen after baking. Reheat in oven to restore crispiness. If bites are too soft, ensure zucchini is fully drained. If mixture is too wet, add more breadcrumbs gradually.
