Ingredients

  • 1¾ cups all-purpose flour
  • 1¼ cups sugar
  • 1 cup pumpkin puree
  • ½ cup coconut oil, melted
  • 3 large eggs
  • ⅓ cup orange juice
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground ginger
  • ½ cup chopped walnuts
  • 2 tbsp pumpkin seeds for topping


Instructions

  1. Preheat oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground ginger.
  3. In another bowl, whisk together sugar, pumpkin puree, melted coconut oil, eggs, orange juice, and vanilla extract until combined.
  4. Combine wet and dry ingredients, folding in the chopped walnuts.
  5. Pour the batter into the prepared pan and sprinkle pumpkin seeds on top.
  6. Bake for 60-65 minutes until golden brown and the bread starts to pull away from the sides of the pan.
  7. Cool the bread in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

Substitute coconut oil with unsalted butter or vegetable oil for similar moisture. Use maple syrup or honey as a sugar alternative, adjusting sweetness to taste. Make ahead by storing wrapped tightly at room temperature for up to 3 days or freeze for up to 3 months. If bread is too dense, ensure baking soda and powder are fresh and avoid overmixing batter. Check doneness with a toothpick to avoid under- or overbaking.
