Ingredients

  • 1 box yellow cake mix
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened (for filling)
  • 2 large eggs (for filling)
  • 1 tsp vanilla extract (for filling)
  • 1/2 cup pumpkin puree (for filling)
  • 1/2 cup unsalted butter, melted (for filling)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 4 cups powdered sugar (for filling)
  • 8 oz cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine cake mix, 1 egg, melted butter, pumpkin puree, and vanilla extract; press mixture evenly into the baking dish.
  3. Beat softened cream cheese until fluffy; add eggs, vanilla extract, pumpkin puree, melted butter, ground cinnamon, nutmeg, cloves, and powdered sugar. Mix until smooth.
  4. Pour the pumpkin spice gooey filling over the cake base and spread evenly.
  5. Bake for 40-45 minutes until edges are set and the center remains slightly gooey.
  6. Allow cake to cool completely.
  7. Beat cream cheese, softened butter, brown sugar, powdered sugar, and vanilla extract together until light and fluffy to make frosting.
  8. Spread the brown sugar cream cheese frosting over the cooled cake.

Notes

For substitutions, use dairy-free cream cheese and butter alternatives for a vegan version. Cake mix can be gluten-free if desired. Make ahead by baking cake and filling, then refrigerate overnight before frosting. Store leftovers covered in the refrigerator up to 4 days. If cake is too gooey inside, extend baking time by 5-10 minutes. Ensure cream cheese is softened to avoid lumps in filling and frosting.
