Ingredients

  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/3 cups sugar
  • 1/2 cup melted butter
  • 2 eggs
  • 1 can pumpkin puree
  • 1/3 cup water
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk


Instructions

  1. Preheat oven to 350°F. Grease a 9×5 loaf pan.
  2. Mix flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. In a separate bowl, beat together 1 1/3 cups sugar, melted butter, eggs, pumpkin puree, and water.
  4. Fold the dry ingredients into the wet ingredients until combined.
  5. In another bowl, beat the cream cheese, 1/4 cup sugar, and egg yolk until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan. Add the cream cheese mixture on top.
  7. Pour the remaining pumpkin batter over the cream cheese layer.
  8. Use a knife to gently swirl the batter layers together.
  9. Bake for 65 to 75 minutes until a toothpick inserted in the center comes out clean.
  10. Let cool before slicing and serving.
