Description

Ingredients

  • 3 large cucumbers, sliced thin
  • 4 medium tomatoes, cut into wedges
  • 1 medium red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 3 tablespoons white vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta (optional)


Instructions

  1. Slice cucumbers and place in a large bowl.
  2. Add tomato wedges and sliced red onion.
  3. Sprinkle with fresh dill.
  4. Whisk together vinegar, olive oil, sugar, salt, and pepper.
  5. Pour dressing over vegetables and toss gently.
  6. Let marinate for 15 minutes.
  7. Add feta if desired.

Notes

For substitution, use apple cider or red wine vinegar instead of white vinegar. Olive oil can be replaced with avocado or grapeseed oil. This salad can be made a few hours ahead; just add feta before serving to keep it fresh. If the salad tastes too sharp, add a pinch more sugar. To avoid sogginess, keep cucumbers well-drained before mixing and marinate at room temperature for best flavor. Refrigerate leftovers up to 2 days.
