Description

Easy Broccoli Salad is a vibrant, crunchy dish featuring crisp broccoli florets, smoky bacon, sweet golden raisins, toasted almonds, and sharp cheddar cheese. Ingredients

  • 5 cups fresh broccoli florets
  • 1/3 cup red onion, chopped
  • 1/2 cup golden raisins
  • 1/2 cup sliced almonds
  • 6 strips bacon, cooked and chopped
  • 3/4 cup mild cheddar cheese, shredded
  • 3/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt


Instructions

  1. Cook and crumble bacon, then set aside to cool.
  2. Chop broccoli into small, uniform pieces.
  3. Toast sliced almonds in a dry pan until golden.
  4. In a large bowl, combine broccoli, red onion, golden raisins, toasted almonds, bacon, and cheddar cheese.
  5. In a separate bowl, mix mayonnaise, white vinegar, granulated sugar, and salt until smooth.
  6. Pour the dressing over the broccoli mixture.
  7. Toss salad until everything is evenly coated.
  8. Refrigerate for at least 30 minutes to chill.
  9. Give the salad a final stir before serving.

Notes

You can substitute dried cranberries for raisins or use sunflower seeds instead of almonds for a nut-free option. Prep the salad up to a day ahead; simply store in an airtight container and stir before serving. For best crunch, add bacon just before serving. If the salad seems dry after refrigeration, add a bit more mayo. Red onion can be soaked in water briefly to lessen sharpness.
