- 3/4 cup mild cheddar cheese, shredded
- 3/4 cup mayonnaise
- 2 tablespoons white vinegar
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
Instructions
- Cook and crumble bacon, then set aside to cool.
- Chop broccoli into small, uniform pieces.
- Toast sliced almonds in a dry pan until golden.
- In a large bowl, combine broccoli, red onion, golden raisins, toasted almonds, bacon, and cheddar cheese.
- In a separate bowl, mix mayonnaise, white vinegar, granulated sugar, and salt until smooth.
- Pour the dressing over the broccoli mixture.
- Toss salad until everything is evenly coated.
- Refrigerate for at least 30 minutes to chill.
- Give the salad a final stir before serving.
Notes
You can substitute dried cranberries for raisins or use sunflower seeds instead of almonds for a nut-free option. Prep the salad up to a day ahead; simply store in an airtight container and stir before serving. For best crunch, add bacon just before serving. If the salad seems dry after refrigeration, add a bit more mayo. Red onion can be soaked in water briefly to lessen sharpness.
