Description

No-Bake Vanilla Cheesecake features a creamy, smooth vanilla-flavored filling atop a buttery graham cracker crust. This easy-to-make dessert requires no oven, just chilling to set. The rich cream cheese and whipped heavy cream blend perfectly with a subtle vanilla hint, while fresh berries add a refreshing finish.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 24 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup fresh berries for garnish

Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar. Press into 9-inch springform pan.
  2. Beat cream cheese until smooth. Add powdered sugar and vanilla.
  3. Whip heavy cream to stiff peaks. Fold into cream cheese mixture.
  4. Pour over crust and smooth top.
  5. Refrigerate 4-6 hours until set.
  6. Garnish with fresh berries before serving.

Notes

Substitute cream cheese with Neufchâtel for lower fat content. Use coconut cream for dairy-free option. Make ahead by preparing 1 day prior; store covered in refrigerator for up to 3 days. If mixture is too loose, chill longer. For firm peaks, ensure cream is cold before whipping. Avoid overmixing cream into filling to maintain fluffiness.
