Ingredients

  • 1 English cucumber, sliced into rounds then quartered

Instructions

  2. In a small bowl, whisk together extra virgin olive oil, red wine vinegar, granulated sugar (or honey), dried basil, salt, and ground black pepper to create the dressing.
  3. Add prepared cucumber, tomatoes, red onion, and chopped parsley to a large mixing bowl.
  4. Pour the dressing over the vegetables.
