Ingredients
- 1 English cucumber, sliced into rounds then quartered

Instructions
- Wash and chop all vegetables. Slice the cucumber into rounds then quarter each round. Slice grape tomatoes in half and cut red onion into thin strips.
- In a small bowl, whisk together extra virgin olive oil, red wine vinegar, granulated sugar (or honey), dried basil, salt, and ground black pepper to create the dressing.
- Add prepared cucumber, tomatoes, red onion, and chopped parsley to a large mixing bowl.
- Pour the dressing over the vegetables.
- Toss all ingredients thoroughly so the vegetables are evenly coated with the dressing.
