  • 1 cup granulated sugar (for batter)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a bowl, mix blackberries with 1/2 cup sugar, cornstarch, and optional lemon juice. Set aside.
  3. In another bowl, whisk flour, 1 cup sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
  4. Pour melted butter into the prepared baking dish.
  5. Pour batter over the butter without stirring.
  6. Spoon blackberry mixture evenly over the batter. Do not mix.

Notes

You can substitute blueberries, raspberries, or peaches for blackberries. For a dairy-free cobbler, use plant-based butter and milk.
