Description

Ingredients

  • 1 inch ginger, julienned
  • 3 cloves garlic, minced
  • 2-3 cups broccoli florets, rinsed
  • Toasted sesame seeds for garnish (optional)
  • 4 boneless skinless chicken thighs, cut into bite sized pieces
  • 2 tbsp oyster sauce
  • 1/2 tsp pepper
  • 1 tbsp cornstarch
  • 3/4 cup water or low sodium chicken broth
  • 1/4 cup oyster sauce
  • 1 tbsp sugar
  • 1 tbsp light soy sauce
  • 1/2 tbsp dark soy sauce (optional)
  • 1 tsp rice vinegar
  • 3/4 tbsp cornstarch


Instructions

  1. Marinate bite-sized chicken pieces with 2 tbsp oyster sauce, 1/2 tsp pepper, and 1 tbsp cornstarch.
  2. In a separate bowl, mix all sauce ingredients: 3/4 cup water or broth, 1/4 cup oyster sauce, 1 tbsp sugar, 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce (optional), 1 tsp rice vinegar, and 3/4 tbsp cornstarch.
  3. Heat 1-2 tbsp oil in a wok over medium heat. Add ginger and garlic; saute for 1-2 minutes until fragrant.
  4. Increase heat to medium-high, add marinated chicken, cook for 10 minutes, stirring occasionally until mostly cooked through.
  5. Pour in prepared sauce, stir to combine, and bring to a simmer.
  6. Lower heat to medium, add broccoli, cover, and cook for 5 minutes until broccoli is bright and tender-crisp.
  7. Taste and adjust seasoning as needed. Serve immediately with rice and garnish with toasted sesame seeds.

Notes

For substitutions, chicken breast can replace thighs, and tamari or coconut aminos can substitute soy sauce for gluten-free needs.
