Ingredients

  • 1 tbsp avocado or olive oil
  • 1½ cups grated sweet potato
  • 1 small yellow onion, diced
  • 16 oz ground pork
  • 2 tbsp maple syrup
  • 1 tsp dried thyme
  • ½ tsp dried sage
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 eggs, beaten
  • 1½ cups almond flour
  • ½ cup coconut flour
  • 2 tsp baking powder

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Heat oil in a skillet over medium heat.
  3. Add grated sweet potato and onion; cook for 6-8 minutes until translucent.
  4. Clear the center of the pan and add ground pork.
  5. Cook pork for 6-8 minutes until cooked through.
  6. Remove from heat and stir in maple syrup, thyme, sage, salt, and pepper.
  7. In a large bowl, whisk eggs and add the pork mixture.
  8. Add almond flour, coconut flour, and baking powder; mix until combined.
  9. Shape mixture into 12 biscuits on the prepared baking sheet.
  10. Bake for 10-14 minutes until slightly browned.

Notes

For substitutions, turkey or chicken may replace pork, and honey can substitute maple syrup. Use oat flour for almond or coconut flour if nut-free is needed. Prepare biscuits ahead and refrigerate for up to 4 days or freeze for 3 months; reheat before serving. If biscuits are dry, add a splash of milk to the mix. If dense, ensure baking powder is fresh and measure flour carefully.
