Description

Layered Potluck Salad is a visually stunning, crowd-pleasing dish perfect for family gatherings, picnics, or potlucks. Crisp iceberg lettuce is layered with tender peas, hard-boiled eggs, rich bacon, sharp cheddar cheese, and topped with a creamy sweet mayo dressing and fresh green onions. The salad chills overnight, allowing for the flavors to meld beautifully, resulting in a refreshing, hearty side.

Ingredients

  • 1 head iceberg lettuce, chopped
  • 1 cup frozen peas, thawed
  • 6 hard-boiled eggs, sliced
  • 8 strips bacon, cooked and crumbled
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mayonnaise
  • 2 tablespoons sugar
  • 1/4 cup green onions, chopped
  • Cherry tomatoes for garnish

Instructions

  1. Hard boil eggs, cool completely, and slice.
  2. Cook bacon until crispy, then drain and crumble.
  3. In a clear glass bowl, layer ingredients in the following order: lettuce, peas, sliced eggs, bacon, and cheese.
  4. In a small bowl, mix mayonnaise with sugar until smooth.
  5. Spread mayonnaise mixture evenly over the top layer.
  6. Sprinkle green onions over mayonnaise.
  7. Cover bowl tightly and refrigerate overnight.
  8. Garnish with cherry tomatoes before serving.
  9. Toss before eating or serve directly in layers.

Notes

Substitute iceberg with romaine or mixed greens for extra nutrition. Use turkey bacon or leave out bacon for a vegetarian version. Try Greek yogurt or a light mayo for a lower-calorie dressing. Assemble up to 24 hours in advance; store covered in the fridge, undressed layers last up to 2 days. If the dressing gets watery, drain excess before tossing. If layers mix before serving, presentation may be less tidy but flavor is unaffected.
