Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract (divided)
- 2 cups ricotta cheese, well-drained
- 1 cup powdered sugar, sifted
- 1/2 teaspoon orange zest (optional)
- 1/2 cup mini chocolate chips, plus extra for garnish
- Powdered sugar for dusting
- Chopped pistachios (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
- In a large bowl, whisk together flour, sugar, and baking powder.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add egg and 1 teaspoon vanilla extract, mix until dough forms.
- Press dough evenly into the bottom of the prepared pan.
- Bake crust for 15-18 minutes until lightly golden.
- Remove from oven and let cool completely.
- In a medium bowl, combine ricotta cheese, powdered sugar, remaining vanilla extract, and orange zest (if using).
- Mix until smooth and creamy. Fold in mini chocolate chips.
- Spread ricotta filling over cooled crust.
- Refrigerate for at least 2 hours until filling is set.
- Cut into 12 squares.
- Dust with powdered sugar, sprinkle with mini chocolate chips and pistachios as desired.
Notes
You can substitute part of the all-purpose flour with almond flour for a nuttier crust. Ricotta should be well-drained to avoid watery filling; place it in a cheesecloth overnight or use a fine sieve. Make ahead by preparing crust and filling separately; assemble just before serving. If the filling is too runny, add more powdered sugar or chill longer. Store covered in refrigerator up to 3 days; best served chilled.
