Description

Classic Cannoli Squares combine a tender, buttery crust with a creamy ricotta filling studded with mini chocolate chips and hints of vanilla and orange zest. Chilled to set and garnished with powdered sugar, chocolate chips, and pistachios, this no-fry twist on traditional cannoli offers an easy, elegant dessert perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract (divided)
  • 2 cups ricotta cheese, well-drained
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon orange zest (optional)
  • 1/2 cup mini chocolate chips, plus extra for garnish
  • Powdered sugar for dusting
  • Chopped pistachios (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, and baking powder.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Add egg and 1 teaspoon vanilla extract, mix until dough forms.
  5. Press dough evenly into the bottom of the prepared pan.
  6. Bake crust for 15-18 minutes until lightly golden.
  7. Remove from oven and let cool completely.
  8. In a medium bowl, combine ricotta cheese, powdered sugar, remaining vanilla extract, and orange zest (if using).
  9. Mix until smooth and creamy. Fold in mini chocolate chips.
  10. Spread ricotta filling over cooled crust.
  11. Refrigerate for at least 2 hours until filling is set.
  12. Cut into 12 squares.
  13. Dust with powdered sugar, sprinkle with mini chocolate chips and pistachios as desired.

Notes

You can substitute part of the all-purpose flour with almond flour for a nuttier crust. Ricotta should be well-drained to avoid watery filling; place it in a cheesecloth overnight or use a fine sieve. Make ahead by preparing crust and filling separately; assemble just before serving. If the filling is too runny, add more powdered sugar or chill longer. Store covered in refrigerator up to 3 days; best served chilled.
